Instructions

  1. Prep shrimp: Pat the shrimp dry with a paper towel and season lightly with salt and pepper (optional).
  2. Cook shrimp: Heat 1 tbsp of butter in a large skillet over medium heat. Add the shrimp and cook for 2–3 minutes per side, until pink and opaque. Remove shrimp and set aside.
  3. Sauté garlic: Add the remaining butter to the skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add zucchini noodles: Toss the zucchini noodles into the skillet and sauté for 2–3 minutes, until just tender.
  5. Combine and finish: Return the shrimp to the skillet and drizzle with lemon juice. Toss everything together to coat in the garlic butter sauce.
  6. Serve: Divide onto plates and enjoy immediately.
