Instructions

  1. Line a baking sheet or plate with parchment paper. Gently open up each date to remove the pit, but don't rip it in half; you want it to still hold together somewhat.
  2. Mix together the peanut butter, protein powder and vanilla paste. Stuff about half a tablespoon of the mixture into each date and lay them flat on the lined baking sheet.
  3. Combine the chocolate chips and coconut oil (or cacao butter) in a small microwave-safe bowl. Heat in 30-second increments, stirring in between to prevent burning, until fully melted.
  4. Drop a stuffed date into the melted chocolate and use a fork to roll it around until it's well coated. Place it back on the parchment and sprinkle with chopped peanuts. Repeat with the remaining dates.
  5. Freeze until the chocolate has set, about 15–30 minutes (if you can wait that long!). Serve straight from the freezer or let them thaw for a few minutes.
