Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the nuts, melted coconut oil, cinnamon, nutmeg, ginger, vanilla extract, and sea salt. If you want a touch of sweetness, add the maple syrup or honey and mix well to coat evenly.
  3. Spread the coated nuts in a single layer on the prepared baking sheet.
  4. Roast the nuts in the oven for 12–15 minutes, stirring once halfway through to ensure even toasting. Keep an eye on them to avoid burning!
  5. Let the nuts cool completely on the baking sheet. They will become crisp as they cool. Transfer to an airtight container for storage.
