Instructions

  1. Heat oven to 400°F.
  2. Mix the turkey, egg, almond flour, garlic, Italian seasoning, salt and pepper. Form into about 16 meatballs.
  3. Place on a lined baking sheet and bake for 15–18 minutes, until cooked through.
  4. Meanwhile, heat olive oil in a large skillet. Add the garlic and cook for about 30 seconds.
  5. Stir in the crushed tomatoes, chicken broth, coconut milk and Italian seasoning. Simmer for about 5 minutes.
  6. Add the spinach and let it wilt into the sauce.
  7. Add the cooked meatballs and simmer everything together for another 5 minutes.
