Instructions

  1. Roast the bones (optional): Preheat oven to 400°F (200°C). Place bones on a baking sheet and roast for 30 minutes for deeper flavor.
  2. Soak: In a large pot or slow cooker, add bones, apple cider vinegar, and water. Let sit for 30 minutes to extract nutrients.
  3. Add veggies and spices: Add onion, carrots, celery, garlic, salt, peppercorns, and optional herbs.
  4. Cook: On the stovetop, simmer on low for 12–24 hours, skimming off any foam. In a slow cooker, cook on low for 12–24 hours. In an Instant Pot, cook on high pressure for 2–3 hours.
  5. Strain and store: Strain through a fine mesh sieve. Store in jars in the fridge (up to 5 days) or freeze for later use.
