Instructions
- Cook the salmon: preheat oven to 400°F (or air fryer to 375°F). Season salmon with salt, pepper, garlic powder, and a squeeze of lemon. Bake or air fry for 10–12 minutes until cooked through and flaky.
- Sauté the mushrooms and greens: in a pan, heat 1 tsp oil and sauté mushrooms for 5–6 minutes until browned. Add spinach or kale and cook until wilted. Season to taste.
- Cook the eggs to your liking: soft-boiled, poached, or fried in a bit of oil.
- Assemble the bowl: layer cooked quinoa or rice, greens, mushrooms, avocado, salmon, and egg. Drizzle with olive oil, lemon juice, or a light vinaigrette.
