Instructions

  1. Season and grill the chicken: season the chicken breast with olive oil, salt, pepper and garlic powder. Grill on medium heat for about 6–8 minutes on each side, or until fully cooked (165°F internal temperature).
  2. Cook the quinoa: prepare quinoa according to package instructions. A ½ cup serving provides a protein-packed base for the bowl.
  3. Steam the broccoli: steam broccoli until tender (about 5 minutes).
  4. Assemble the bowl: combine the cooked quinoa, steamed broccoli and grilled chicken in a bowl. Add a squeeze of lemon or a drizzle of dressing if desired.
