Make it your own: Add black beans for extra fiber, toss in bell peppers or zucchini, or serve with a fried egg on top for even more protein.

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the sweet potatoes and onion and cook for about 7–8 minutes, stirring occasionally.
  2. Add the water or broth, cover, and cook for another 4–5 minutes, until the sweet potatoes begin to soften.
  3. Add the ground turkey, garlic, paprika, cumin, garlic powder, salt and pepper. Cook until the turkey is fully browned and cooked through.
  4. Stir in the spinach and cook for another 1–2 minutes, just until wilted.
  5. Serve warm and add avocado, cilantro, or pumpkin seeds if desired.
