Instructions
- Preheat oven to 400°F (205°C).
- Line a sheet pan with foil or parchment for easy cleanup.
- Place chicken and vegetables on the pan in a single layer. (If using potatoes, give them a little extra space so they roast, not steam.)
- Drizzle olive oil over everything.
- Sprinkle seasonings evenly and toss lightly with your hands or a spatula to coat.
- Roast 20–30 minutes, stirring halfway through, until chicken reaches 165°F internal temp and veggies are tender with browned edges.
- Finish (optional): squeeze fresh lemon over the top or add a sprinkle of parmesan.
