Instructions
- Preheat oven to 375°F. Grease an 8x8 or 9x9 baking dish.
- In a large bowl, whisk the eggs and cottage cheese together. Stir in the turkey sausage, spinach, feta, bell pepper, onion, garlic powder, salt and pepper.
- Pour the mixture into the baking dish. Top with shredded cheese if using.
- Bake for 30–35 minutes, or until the center is set and the edges are lightly golden. Let it cool for a few minutes before slicing.
