Instructions
- In a bowl, mix olive oil, lemon juice and zest, garlic, oregano, salt, and pepper.
- Toss chicken in the marinade. Let sit 15–30 minutes (or up to 12 hours in the fridge).
- Thread marinated chicken and veggies onto skewers (metal or soaked wooden).
- Preheat grill to medium-high. Oil grates lightly.
- Grill skewers for 10–15 minutes, turning every few minutes, until chicken is cooked through and has nice grill marks.
